It has been a well-known fact that Memphis is famous for its ribs. What is their secret that makes them experts? First, picking the right rack is key – a St. Louis style cut pork rib is preferred. Then you use the ‘slow and low’ method, which translates to slow-smoking the meat for a longer time at a low temperature, usually over hickory wood. True Memphis-style ribs are served up without barbecue sauce and replaced with a dry rub shake so you can really taste the smoky flavor of the meat. Sticky Fingers has carried on that great Memphis tradition in its restaurants since 1992.
